FEBRUARY 2012: A Weekend "alone"

Addi and Michael went to Texas this past weekend...without me. :( 

I'm not a fan of not being with my child (and husband for that matter) for a few days, but it was a great opportunity for Adelyn to spend some time with Grandma Carmack, as Michael helped her move out of her house into a new place. When I realized I would have 2 and 1/2 full days to myself, I realized it's been quite some time since I've had that! So, in order to keep my mind away from missing my family, I decided to take advantage of this situation, and do some things that I have been thinking about...dreaming about...for the past 6 months to do.

I scheduled an hour massage, had coffee with a friend, got dinner with some old high school students that I just adore, completed 8 loads of laundry, sat in the hot tub with my mom, rented a couple movies, threw a baby shower for my cousin, and cooked.

Oh yes. I cooked. For quite some time, I have been wanting to try a bunch of recipes that I found through various means, and I also wanted to make lots and lots of "freezer meals" so that I could eat healthy because it would be "convenient".  Cooking took up every single minute in between, around, and through all the above mentioned activities. After making lists upon lists on Thursday night, I headed to the grocery store Friday morning, and from then on, for 16 hours straight I had crock pots going, the oven baking, skillets sauteing, the knife and food processor chopping, And a HUGE mess through it all. I just had to snap a picture in the midst of my cooking to see what a mess I was making:



There's something about cooking that I just love! Cooking and shopping is my life therapy (though, it probably would be cheaper just to go to therapy! ha). I decided to only make meals that Michael and I would eat for breakfast and lunch, because we also do "Let's Dish" meals once a month, so that pretty much takes care of all our dinners, and those are all in the freezer downstairs.

So from Friday at 10am-2am Saturday, I made 14 different recipes, totaling 84 individual meals that we will enjoy over the next couple months. Here is a picture of our upstairs freezer packed with the final result (our downstairs freezer is packed too). 


If you care, (actually this is for my own reference to look back on), here is what I made (all healthy/low fat/low calorie items):


Cream cheese pumpkin bread, Sloppy Joes, Chicken and Rice soup, Tomato Parmesan Soup, Oatmeal cookies, Individual fresh fruit smoothy bags, Egg McMuffins, Bean Salsa, Chicken Burritos, Mini BBQ Chicken Pizzas, Pancakes, Banana Oatmeal Cups, Chicken Salad, and Cauliflower Pizza Crust.

I never thought my kitchen would look the same again...but by Saturday afternoon, I had it back to normal (this is what it is supposed to look like!)



AND, as I mentioned above, I also threw my cousin Jen a baby shower this weekend! So, IN ADDITION to all the cooking I did for myself, I also cooked/made things for her shower. Here are some fun ideas that I got off of Pinterest for her shower. I can't wait to meet this baby girl...Feb. 29th can't come soon enough!! It will be so fun having our girls only 7 months apart, because Jen and I grew up together and we were only 4 months apart, and we had so much fun growing up (and still now!)

It was a great shower! After an insanely busy (but hey - that's just my style!), and fun weekend "alone", I was so excited when Sunday night came and I was on my way to the airport to pick up my baby and hubby. As much fun as I had by myself, I'm glad it was only a couple of days.  After picking them up from the airport, we went straight to a Super Bowl party that our friends' Scott and Maggie threw. A great end to a great weekend:)
